Pizza and gelato come together in a celebration of taste and inclusion. Dough, ingredients, and temperatures will provide the common ground for Simone Gambino and Noè Pinetti to explore creative pairings between pizza and artisanal gelato. An evening that also highlights the value of opportunity: learning a trade, working together, and building connections through food. Al Fresco, led by Chef Simone Gambino, is located in the garden of Casa San Francesco, a former 17th-century convent in Palermo’s Ballarò district. Born from the experience of Cotti in Fragranza and managed by the social cooperative Rigenerazioni, it brings together dining, training, and employment inclusion. Noè Pinetti, Master Gelato Maker at La Carapina in Rivalta di Reggio Emilia, focuses on locally sourced ingredients and original flavor combinations. His creative exploration includes gelato interpretations of traditional Emilian cuisine, from erbazzone to cappelletti.

Noè Pinetti, 23, is one of the most interesting young talents on the Italian artisan gelato scene. At just 21 he opened his first artisan shop, turning passion, creativity and determination into a project able to stand out from the start. His philosophy is founded on showcasing local raw ingredients and on collaboration with small farms and producers in the provinces of Reggio Emilia and Parma, helping to tell the story of the area through gelato. His range spans the most traditional flavours, reinterpreted with a contemporary sensibility, and innovative creations and gastronomic gelati marked by unexpected pairings that surprise and win over the palate. A vision that has earned him recognition among the best emerging gelato makers from Food and Dolce Salato. Alongside his work in the workshop, Noè has built a strong presence on social networks, where he shows the behind-the-scenes of his work with authenticity and irony. His funny, spontaneous reels have helped to create a loyal community, even making his grandmother a true icon of the gelateria. Young, dynamic and deeply tied to his roots, he continues to innovate without losing his bond with tradition.
