Gelato, heritage of Italian cookingwith Danilo PoggioTalkFree
Gelato, heritage of Italian cooking
Tradition, identity and cultural recognition
Sunday 15 November
·
10:30–11:15
Piazza Verdi
Italian cooking has entered UNESCO’s intangible cultural heritage. What place does gelato hold in that recognition? Like pizza, it identifies Italy around the world: is a dedicated path needed to protect and pass on the knowledge of gelato makers, following the example of the art of the Neapolitan pizzaiolo? A conversation on identity, craft and shared heritage.

Biancamenta
Antonio Russo is the gelato maker of Biancamenta, opened in 2013 in Porto Recanati and immediately recognised for an identity different from the tourist gelaterias of the area. Born in Lucania (Basilicata) and adopted by the Marche, after various experiences running pubs, pizzerias and bars he graduated in economics, honing his entrepreneurial skills. During his studies he met Serena Corbo, his partner in life and work, and together they decided to embark on the gelateria adventure. Biancamenta was created with a precise approach: entirely gluten-free production, vegan and lactose-free flavours, and gelato kept in pozzetti (lidded wells), among the first in the Marche to do so. Antonio attended courses at Gelato University and Gelato Master School, perfecting his technique with advanced courses by Arnaldo Conforto and Stefano Ferrara and cold-pastry consultancy from Francesco Boccia and Luca Bernardini. The distinctive feature of his work is an obsessive attention to the structure and creaminess of gelato, because “structure carries flavour”, with a range oriented towards naturalness, functional and healthy foods and great classics revisited in a modern, distinctive key. Over time Biancamenta has earned recognition such as the regional final of the Gelato World Tour 2017, two Gambero Rosso cones in 2025 and third place at the Procopio Cutò Award at Sherbeth 2025, confirming an ethical, sustainable and quality-driven approach to production.

Danilo Poggio is not only a professional journalist dealing with daily news as editor of a Piedmontese regional TV bulletin. He is also a food-and-wine enthusiast by descent, vocation and choice. A certified wine taster, he sits on the juries of wine and food competitions. For over 15 years he has talked about dishes and wine in print (Avvenire, La Cucina Italiana, Condé Nast Traveller), on radio (Radio Deejay and Radio Capital), on TV (Italia Uno, Rai Scuola and GRP Televisione) and at many live events around Italy — as his videos on Instagram, YouTube and the Spotify podcast I nuovi mosti show. Made a Knight of the Italian Republic for his passion in 'spreading the value of local territories', he loves to taste places, convinced that serious questions can only be asked at the table, and strictly after dessert. He returns to Sherbeth with boundless enthusiasm.
1. You buy Tasty2. You show your QR3. You play: taste, tell, win4. Transfer TASTY, anywhere and to anyone5. You join our events6. You find where the makers are
Tasty are the festival's credit. Buy them as often as you like, picking the package you prefer — from your phone or at one of the tills — and then go from stand to stand without reaching for anything again.
One Tasty is worth one euro of gelato. But each package is an offer of its own: the bigger it is, the more Tasty we throw in. Keep an eye on the promotions.
At the stand you open your wallet and let them scan your Wallet QR code, or you read out your Code. The maker reads it, the Tasty move, and the gelato is yours.
The code lives in the bottom bar, under your thumb: keep it ready while you queue.
You can send Tasty to anyone, as many as you like, and receive them from anyone who sends you some. And if you are holding a receipt with Tasty on it, you load it and they land in your wallet: that works even for a receipt you did not buy yourself — anyone can hand it to you, the way a paper voucher is handed over.
Whatever is left stays where it is, and you can always hand some to whoever is with you.
Who is taking part, which flavours they bring and where in the square their stand is: the map tells you in one tap, and each maker's page tells you the rest.
Favourite the ones you want to taste: you will find them together once you are there.
